Homemade quick ranchero sauce for breakfast and other Mexican meals.

- 3 cups chicken broth
- 1 – 14.5 oz. can diced tomatoes
- 1/2 fresh jalapeño, diced
- 1 medium onion, diced
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp kosher salt
- 2 TBSP olive oil
- 1 TBSP chopped fresh garlic
- Heat olive oil in a sauce pan on medium heat. Add onion, garlic, and jalapeño. Cook until the vegetables are soft.
- Add tomatoes and spices. Simmer on medium heat for 5 minutes until sauce reduces.
- Add chicken broth. Simmer on medium/low heat until sauce reduces by half, about 30 minutes.
