Ranchero Sauce

Pour more ranchero sauce over top of the huevos rancheros cups to add more flavor and juiciness.

Homemade quick ranchero sauce for breakfast and other Mexican meals.

Ingredients

  • 3 cups chicken broth
  • 114.5 oz. can diced tomatoes
  • 1/2 fresh jalapeño, diced
  • 1 medium onion, diced
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp kosher salt
  • 2 TBSP olive oil
  • 1 TBSP chopped fresh garlic

Instructions

  1. Heat olive oil in a sauce pan on medium heat. Add onion, garlic, and jalapeño. Cook until the vegetables are soft.
  2. Add tomatoes and spices. Simmer on medium heat for 5 minutes until sauce reduces.
  3. Add chicken broth. Simmer on medium/low heat until sauce reduces by half, about 30 minutes.
