Crock Pot Pork Chile Verde

An easy chile verde with loads of flavor! Serve in tacos, burritos, or on top of eggs.

Ingredients

  • 1 Pork Roast (about 2 lbs)
  • 1 TBSP Kosher Salt
  • 1 TBSP Cumin
  • 1 TBSP Black Pepper
  • 1/2 TBSP Red Chili Flake
  • 116 oz Jar Salsa Verde
  • 4 small red potatoes, cubed
  • 2 cups chopped tomatoes
  • 2 cups chopped tomatillos
  • 1 onion, chopped
  • 2 cups of water
  • Cilantro as garnish

Instructions

  1. Pat the pork roast dry with Viva Vantage Paper Towels.
  2. Lay the roast in the bottom of the crock pot.
  3. Rub all of the spices onto the roast.
  4. Add all of the chopped vegetables and spices.
  5. Add 2 cups of water.
  6. Cover and cook on LOW for 6 to 8 hours or until fork tender.
  7. Serve in tacos, burritos, or on top of eggs.
